Pickled cucumbers, sour cucumbers - a food item commonly known in central and eastern Europe. It is made from ground cucumbers placed in a barrel of non-smoly hardwood in a stone pot or jar with the addition of dill stalks and umbels, horseradish roots, garlic cloves in water with salt, which are subject to pickling.
Pickling and souring are equivalent terms that can be used interchangeably. Pickled cucumber and pickled cucumber are synonyms for exactly the same product: a cucumber subjected to a natural process of lactic fermentation by which the simple sugars present in the plant cells are converted to lactic acid.
